Summer Sweet Corn

The saying is that corn stalks should be knee-high by the Fourth of July. If we are in the Midwest, we don’t have to go far from home to find a farm with a massive field of cornstalks that high right now.

Iowa and Illinois account for about one-third of the United States corn crop. In fact, 90% of Iowa’s land is devoted to agriculture. Other states that produce large quantities of corn include Nebraska and Minnesota, which also lead in yields.

Hot off the grill, dripping in butter, and heavily salted or seasoned, sweet corn is a staple at summer barbecues, festivals, and state fairs across the United States. We also use corn in corn flour, cornmeal, hominy, grits, and popcorn, as well as, tortillas, cereals, soups, cooking oil, margarine, corn starch, and salad dressings.

Corn is more than flavorful. It is also nutritious. According to Johns Hopkins Medicine, a medium ear of corn is gluten-free, low in fat (without the butter), and high in fiber. It contains about 3 grams of protein, 5 milligrams of sodium, 244 international units of vitamin A, about 15 grams of carbohydrates, small amounts of B vitamins, magnesium, potassium, antioxidants, vitamin C, lutein, and zeaxanthin.

I’m delighted when sweet corn is in season, because I have several recipes that include it, and fortunately the tastiest sweet corn is grown a little over a mile in any direction from my home. Homemade cornbread with and without cheese and jalapeno, corn and poblano pepper soup, corn cake, and corn salad are a few of my favorite recipes with this ingredient.

Last year, I posted my Summer Corn Salad recipe. It’s a side dish I can eat all day long! You might want to check it out.

And, following are some interesting facts on corn.

  • Corn silk is essential for pollination.
  • There are somewhere between 500 and 1200 kernels in an ear of corn.
  • The US produces about 40 percent of the world’s corn according to the USDA.
  • Most of the corn you see in Iowa is field corn.
  • US farmers produce 9,000 pounds of corn per acre.
  • Corn cobs have an even number of rows.
  • An acre of corn eliminates 8 tons of carbon dioxide from our air.
  • There are 125 calories in a cup of corn.
  • An ear of corn has one silk stand for every kernel.
  • Each corn plant produces one to three cobs.
  • Corn was first domesticated in southern Mexico more than 10,000 years ago.
  • Corn is grown on every continent except Antarctica.
  • Whether corn is considered a vegetable, grain, or fruit depends on when it’s harvested and the variety of corn.

Sweet corn make smy tummy so happy. We had an ear with our grilled chicken last night. My Gramps would put newspaper down in front of his chair at dinner table and eat 10-12 ears of corn for supper. He grew the best corn. I’m also enjoying the sweet corn while in season, we bought some ears to freeze. The are so many great deishes you can ake with sweet corn and today I bought two fresh soups that have sweet corn, can’t wait to eat. Most of our families planted corn and raised there families on the stable. Yummy!

    1. Mary K. Doyle

Your grandpa’s ability to eat that much corn is amazing, Melinda! Enjoy all your corn treats.

      1. Looking for the Light

I don’t know how it did it but corm and tomatoes were his favorite items.

  2. Dawna

Love the photo. Love love love the fun facts about corn, none of which I knew. You made today a great day, I learned multiple new things. Thank you. Never knew corn could go either way, fruit or vegetable, depending on the time of year harvested.

Have the greatest of days. Hugs

    1. Mary K. Doyle

Thank you, Dawna. All these fun facts we won’t remember. 🙂

  3. Willie Torres Jr.

One thing I love most about fall fairs is the Grilled Corn.

Now I want to go get corn and grill them. Yummy.

    1. Mary K. Doyle

I’ve been getting my fill. Sure do love it. Have a great day, Willie.

      1. Willie Torres Jr.

Absolutely, I need to get some now. But honestly, nothing beats a visit to the pumpkin patch in the fall and enjoying corn at the fair. It’s a must-do, just like apple cider and apple cider donuts. Oh no, now I’m craving apple cider, donuts, and grilled corn. You’ve made me so hungry!

        1. Mary K. Doyle

Hahaha. Every holiday has its food traditions we enjoy. Thank you for visiting, Willie. Always good to talk with you.

  4. Under the mask..

Wow, an acre of corn has a beneficial footprint — who knew?? Gonna check out your recipe above — sounds good.

    1. Mary K. Doyle

I had no idea about that either. Let me know if you try the recipe. Thank you for visiting.

  9. festo_sanjo

Our popular meal here in Africa is “ugali”! Made out of corn flour… but we can use it in a variety of ways, like mixing it with beans to make “makande”! Like literally it’s one of the popular crop and it’s widely grown

    1. Mary K. Doyle

Good to know, Festo. I have tried very few African dishes. I will have to look into this.

  10. Ana Daksina

    Fascinating facts!

  12. Dorothy’s New Vintage Kitchen

Our corn is coming in strong, and boy is it sweet this year! So many possibilities, but I think I like it best served up simply, a little butter, a little salt, and I’m happy!

    1. Mary K. Doyle

I know! Salt and butter on sweet corn–so, so good. Will you be posting any corn recipes, Dorothy? I do love your dishes.

      1. Dorothy’s New Vintage Kitchen

I’ll probably have something soon! In the meantime, I suggest one of my succotash recipe! Here’s one to try-

        Not quite your mother’s Succotash

        1. Mary K. Doyle

Thank you, Dorothy. As always, your recipe looks delicious. I’m not a lima bean fan, mostly because I’ve only had them a few times. I’ll have to try your recipe.

          1. Dorothy’s New Vintage Kitchen

I like this best with fresh soybeans, much tastier than limas in my book!

          2. Mary K. Doyle

Good to know, Dorothy. I’ll see if I can get soybeans.

  13. Nancy Homlitas

Corn has been getting a bad rap recently-maybe because it’s not a green vegetable and can be starchy if cooked wrong. I am surprised to learn about corn’s nutrient content and its environmental benefits. Thanks, Mary. 🙂

    1. Mary K. Doyle

Corn also is relatively clean from pesticides according to EWG. Thank you for commenting, Nancy.

  14. Michele Lee

Love your corny post! 🌽 Thank you, Mary. I recently started making corn on the cob in my pressure cooker. It is fast and delicious. I will never forget seeing the miles of corn fields in Iowa when I as a child. My dad was born and raised there.

    1. Mary K. Doyle

Miles and miles of cornfields all around here too, Michele. I’ve never made corn on the cob in the pressure cooker. In fact, I haven’t used the pot for years. It does have so many good uses.

      1. Michele Lee

The land and people who farm on it are a blessing. Mine cooker is new – I am old school, but my mom and daughter have been going about theirs for a few years now. I am learning.

  15. Pooja G

Loved the post, learnt quite a few things about corn. I love corn, it’s one of my favourite vegetables (grain?). I recently saw the viral Frito corn salad and want to try a vegan version of it. Not sure if you’ve seen it but it looked really delicious.

    1. Mary K. Doyle

No, I haven’t seen it, Pooja. Are there Frito corn chips in the salad?

      1. Pooja G

Yes, a bag of Frito’s and some mayo and black pepper along with other ingredients.

        1. Mary K. Doyle

          Hmmmm. I guess, it’s worth a try.

          1. Pooja G

I tried a vegan version of the salad and found one whole bag of Frito’s to be too much. It got very salty. I would recommend like half a bag.

          2. Mary K. Doyle

            Maybe something to share.

          3. Pooja G

Yes, I think it would work well as a side too.

  16. Mindful Mystic (MM)

Will try your summer corn salad. I learned quite a bit about corn in this post. 🌽

    1. Mary K. Doyle

Thank you. I had to cut out half of my findings. I was also happy to learn that corn had little pesticide residuals.

      1. Mindful Mystic (MM)

I was happy to learn that too!

  17. Garden Bliss

Wow! The versatility of corn and such great facts – very enjoyable reading.

    1. Mary K. Doyle

Thank you, Garden Bliss. Have you ever grown corn?

      1. Garden Bliss

Hi Mary, I’ve never tried to grow corn here in summer. When I lived in the sub-tropics there was too much humidity. It must be very rewarding seeing those long, luscious plants yield their golden cobs. Cheers, Flavia.

        1. Mary K. Doyle

It is amazing how large the corn stalks grow from one little seed. All the best to you, Flavia.

          1. Garden Bliss

Thank you Mary, have a beautiful day too.

          2. Mary K. Doyle

            You too!

Amazing facts, photos, and so much deliciousness! I see that corn is more like a state of mind than a plant category 😀
And I had no idea about the variety of dishes you can make from it! 🙂 I love a very simple version of it—boiled in salty water (no smearing with butter afterwards) or just fresh!
    Thanks for sharing ❤

    1. Mary K. Doyle

Corn is definitely a state of mind at this time of year in the Midwest. All the best to you!

    2. DTenacious

You could add virgin oil on them, it’s so delicious and healthier!

      1. Mary K. Doyle

Yes, I’m a fan of virgin olive oil. I know it is healthier, but sometimes that butter is yummy. Thank you for commenting!

  34. flyhighdef

Oh yea, love some corn. Just cooked some on the grill last weekend. I coat them with butter, sprinkle any dry BBQ rub, wrap them in foil & put them on the grill for 45 minutes….so good.

    1. Mary K. Doyle

Adding the BBQ rub is a great idea.

I love corn! I think we’ll be eating even more of it now that we’re trying to go gluten-free.

    1. Mary K. Doyle

      I don’t eat a lot of carbs, but I love real bread. I can’t do gluten-free, just gluten-less.

  37. Quintillabella

    It’s season of harvest 👍👍

    1. Mary K. Doyle

It sure is the season of harvest. So many delicious vegetables are now available.

  39. Cindy Georgakas

Thanks for sharing this great info, Mary. Corn gets a bad rap because of it’s high sugar content and it’s not fair because all of the great nutrients in it you just talked about. Another trainer in town says “grain and corn are for pigs that’s why their fat”. I just roll my eyes.. 😉💗
Great recipe, I’ll give it a go.. thanks🙏🏼

    1. Mary K. Doyle

How funny! I really like the corn fresh, so we have it a couple of months a year.

      1. Cindy Georgakas

I know right. Well, we’re not fatter for it that’s for sure lol 😆

Wow I learned so much about corn today, thank you! I love corn! It is one of my favorite vegetables. I have always been told it is one of the least nutritional vegetables, so I am happy to learn that is not true – although I’m sure how I eat it isn’t all that nutritious 😂.

    1. Mary K. Doyle

I know! I am happy to learn it has some benefits. Thank you for visiting.

The last time I drove through the Midwest, the cornfields were everywhere, and I was amazed by the things I saw in the cornfields – from old cemeteries to carnivals. I love corn on the cob with real butter!

  44. Tamyra Miller

I buy lots of corn from a local farmer. I freeze it so I can enjoy it year around. Yummy!

    1. Mary K. Doyle

Hello Tamyra. Thank you for adding into the conversation. Freezing the corn is a great idea.

  45. Ellen Hawley

Living in the UK, I do miss US sweet corn. This isn’t corn country. I can get it frozen, but the stuff, but the truly fresh corn? This just isn’t the climate for it.

    1. Mary K. Doyle

Thank you for commenting, Ellen. Fresh sweet corn is so delicious. Maybe we love it so much because it’s only available for a few months each year.

      1. Ellen Hawley

Possibly–but also because it’s just so good.
